Arrival in Cadiz inevitably gives one the sensation of being in many places at the same time. The city rests in the splendour of a bay into which, in its day, silhouetted on its horizon the galleons sailed in, loaded with gold and other riches brought from the Americas. Perhaps for this very reason, the spirit of the people of Cadiz navigates between the characteristic good nature of the Andalusian and the yesteryear exoticism of the Spaniards who made good in America, their heritage in the palm-lined avenues of mansions, business emporiums, bay windows keeping watch over the Atlantic… Like the balcony atop Cadiz Cathedral’s Poniente Tower, a privileged position to overlook the immensity of the ocean. Or the Tavira Tower, the highest of them all rising above the city streets. From the heights, one can contemplate a lively city, one of bustling recreation, filling the narrow streets leading to a multitude of squares.

The ocean is present everywhere. Not in vain does it surround the city on three sides. Stone and water merge together on its shores. The San Carlos city wall closes off at an angle the district which bears the same name, where monumental neo-classic façades abound. Traces of the lengthy history of a city bonded with the Mediterranean-bred Phoenicians are displayed in the Museum of Cadiz, on the Plaza de la Mina. From the Roman era, the Roman Theatre in the Pópulo district is still preserved, between the Old Cathedral and the Blancos Arch, this latter monument dating from Mediaeval times. What is fascinating about Cadiz is that so many different periods in history exist in such harmony, blending one with another, forming a unique whole which is unusually beautiful at sundown, when the sun tinges in red the stonework of a city surrounded by almost tropical beaches, like La Caleta in the old city confines; La Victoria and La Cortadura, where the sand dunes and rocky hinterland join together to form a unique landscape. The gentle climate all year round contributes towards making the city a source of pleasure, delighting all the senses.

Mojama:
The Arabs of the south-western coast of Spain took advantage of the warm, dry climate, and to keep fish from going bad, they covered the tuna with salt and dried it in the sun; the result of this process was called musama, and today it is known as mojama.
